Sometimes a smaller, better thought-out menu can be more effective.
Look at what's actually selling. Which dishes make you money? Which share ingredients? Which are quick to prepare? Which travel well? And which ones are sitting on the menu simply because they've always been there?
Your best menu may not be your biggest menu.
